| The gastronomy understood by the inhabitants of this Torreño neighborhood is reflected in a work with almost a hundred recipes that has been presented this week | Like fresh out of the oven.
This is how you can find the "Sabores de La Florida" cookbook, a book published by the festival committee of this Las Torres de Cotillas neighborhood that compiles its traditional cuisine from the hands of its own neighbors.
A very special neighborhood project that arose during the confinement suffered at the beginning of the pandemic, a period in which the recipes were compiled.
"Like many other citizens, Floridians saw entertainment in the art of cooking during those days when we couldn't leave the house," recalls the pediatrician from LaFlorida, EncarniRuiz. This work has been presented this week at the local City Council, in a ceremony attended by the Torreño mayor, Joaquín Vela Fernández, the deputy mayor and councilor for Barrios and Pedanías, Marian Fernández Fernández, and the pediatrician herself, who gave a copy to each other.
"We thank the residents of La Florida for their contribution to keep alive a tradition as ours as gastronomy.
It is, without a doubt, the most vivid example of what is cooked in this peculiar corner of Las Torres de Cotillas", points out the mayor. Almost a hundred recipes, both salty and sweet, where traditional spoon dishes of a lifetime could not be absent.
In addition, desserts also have an important role in this book, with a recipe for papajarotes, fritters, stewed coffee, etc.
"This book demonstrates the sociocultural concern of our neighbors and gives us all the opportunity to recreate recipes at home that are a true gastronomic treasure of our town," says the mayor.
